Im not sure that I will actually be making any of these but here is my tentative meal plan for a few days of this week:
Monday: Crispy blackened tofu with veggies and rice
Tuesday: a late St. Patty's day dinner of corned beef, cabbage, and red potatoes
Wednesday: Blackened chicken with cilantro lime quinoa + veggies
and I definitely want to make these soon
Oooh, yum! I'm going to try the blackened chx with quinoa next week. I have tried making quinoa before and was not a fan of the bland taste but this recipe makes me think it could by good :)
ReplyDeleteSometimes I cook my quinoa with chicken broth and that gives it a little more flavor too! It can definitely be bland though. Excited to see how you like it :)
