Gasworks park

We have had some fantastic weather here since the 4th of July. I'd like to think we have been taking advantage of the sun but it always feels like we could be doing more outside. Last week we went to Gasworks park in Seattle. It was such a beautiful sunny day and we had great company in the form of Christian and Amber. The perfect place to eat our yummy sandwiches from paseo.

Thai chicken lettuce wraps

Im not a fan of shrimp so I used chicken for this recipe but either will work. The sauce makes the dish, really its more like a spread, you can find the recipe here. Its a little nutty, a little sweet, a little salty, delicious. If you prefer a saucier consistency just add more coconut milk!
Prep for this meal is quick and easy. I made it last night and layered quinoa, chicken (cut into strips or chunks and cooked in a skillet), and sauce and just had salad on the side.

4 months old

Happy 4 months Lewis!

this boy is getting so old! He has changed so much in the past few weeks and met so many new people. Its amazing watching him grow and develop. He is 14lbs .5 oz and 25.5 inches long
recent changes:

  • grabbing his feet
  • chewing his fingers
  • "talking"
  • grabbing (toys, hair, noses, and lips)
  • watching us eat
  • his first swim
  • his first tooth!! Just noticed the sharp little point of his first tooth on the bottom left. Im still so shocked that he is already getting teeth!

Summer workout

Hi everyone! Today I thought I would share what I've been doing for exercise for the past 3 weeks. Every summer and winter Gina creates a 4 week long workout program with an exercise for every day + ideas for healthy meals and snacks. This year's summer shape up has been so awesome; a perfect way to get in some exercise every day. It is especially convenient if you have a full time job or little kids at home because you don't have to run to the gym to complete the workouts. Each week she posts a new workout and menu with tips on form and food prep.
I have been doing the workouts and eating healthier for 3 weeks and have already lost several pounds. Its always hard for me to get into the habit of working out because I am not a very good self motivator. The schedules that Gina posts have helped me to stay on track and keep me motivated to do my workout every day.
