Its funny how the routine of living life subtly and gradually prepares you for each day, one right after the other. After I had Lewis I couldn't imagine being able to take care of a baby AND cook dinner every day AND get chores done around the house and...shower. But here I am 6 weeks later and somehow I managed to cook dinner this week! Some of the meals I carried over from a couple of weeks ago because, thanks to Molly, I didn't even end up needing to cook at all
Monday - Salmon with lentils, beets, kale + spinach salad, and an artichoke
Tuesday - Fig-Prosciutto pizza
Wednesday - Blackened chicken with lime Quinoa + salad + rosemary white cheddar biscuits
Thursday - Spicy Southwestern Pork tenderloin (from Jess) with rice and salad
Friday - Crispy Blackened tofu noodle bowls
Saturday - Spinach tortellini with roasted veggies

Sweet Treats
I've had a crazy urge to bake some sweet treats the past few days, nothing complex and involved, just a simple cookie or bar or pie or cake! Since its just me, Jeff, and Lewis here I tend to just drool over delicious recipes so that we don't end up getting having to eat 500 cookies (or so that we don't have a freezer full of goodies calling our names). With that said, here are the delicious treats I have decided to make over the next few months. I'll post recipes in the days to come
- Biscoff stuffed white chocolate chip cookies ( I have no idea what Biscoff is but I guess we'll find out soon enough!)
- Banana bars
- The best chewy chocolate chip oatmeal cookies I've ever had from Lindie
- Chocolate Pudding
- Ice Cream Sandwiches
- Chewy Molasses cookies
- Kahlua brownies
- Sticky buns (probably going to have to make these sooner rather than later...)

6 weeks
6 weeks old already! Lewis is growing sweeter and sweeter every day if thats possible. We love him so much! At 6 weeks he is smiling and cooing at us all the time. I had to pack up his newborn clothes yesterday because he is too long for them all. It was a bittersweet time; its hard to believe that he will never wear any of his sweet tiny clothes again. He is a strong little guy and has rolled over from his stomach to his back a few times and holds his head up all of the time. He even has a little personality already. He spends a lot of time just sitting and taking everything in, very contemplative. There are so many pictures I want to share ( I probably take at least 30 every day, hah) but here are just a few.

Mimi + Poppy and Grandma + Grandpa
It was so fun introducing Lewis to his Mimi and Poppy two weeks ago and to his Grandma and Grandpa last week. It was wonderful watching Lewis as he memorized faces and got used to new people. He has changed so much even in just the past few days, its hard being away from family. We can't wait to see everyone again soon!

One month old
Geeze its been hard to update the blog lately! Im sure it will be much easier when I get back into the swing of things but as of now I find that I have no time with all of the baby watching I do
I can't believe its already been one month since we brought Lewis home. This past week we enjoyed our first Easter together as 3. Lew has started sticking his tongue out and making some pretty cute facial expressions. He is more animated each day and we just love talking to him and watching him take everything in. He is also working on finding his fingers to suck on. One day last week as I was rocking him to sleep I saw that he had put his tiny thumb into his mouth and was sucking away, so adorable.

Meals for this week
Im not sure that I will actually be making any of these but here is my tentative meal plan for a few days of this week:
Monday: Crispy blackened tofu with veggies and rice
Tuesday: a late St. Patty's day dinner of corned beef, cabbage, and red potatoes
Wednesday: Blackened chicken with cilantro lime quinoa + veggies
and I definitely want to make these soon
