A quick review on meals for last week:
both the chicken and vegetable lo mein and the Steak fajitas were da bomb. So very, very tasty, I will definitely be making both again soon. I loved the added crunch in the chicken and vegetable lo mein from the chopped almonds (I used roasted unsalted).
Here is a look at what we have been eating this week
Sausage, egg, and sweet potato breakfast skillet - had this last night...amazing
Chicken cacciatore - also delicious. Just throw ingredients in the crock pot and have a yummy dinner when you get home from work. We had ours over steamed broccoli but it would be so good over rice or noodles too!
Rogan Josh - I've made this many times now and always use beef stew meat instead of lamb. I also add in some green beans and occasionally some cubed potatoes
Chicken Laksa - can't find the recipe I used but it was very simple. Just fry a few Tbs of red thai curry in a large sauce pan for a few minutes then add a can of coconut milk and 2 cups of water. Add 1 bell pepper, a few carrots, and some zucchini (all chopped into sticks) and bring to a boil. Throw in some cooked chicken and cook until veggies are tender. If using seaweed noodles throw them in with the veggies so they get nice and soft. When eaten raw they have a strange crunchy texture, much better when cooked.
