Weekly Meals

This week we are finally (partially) recovered from our move on the 14th. Everything was still so messy and unorganized last week and it was really hard for me to want to cook anything that involved pots and pans.

Here is what we are having for dinner this week:


*Taco Salad - Rub a roast with a mixture of chili powder, garlic powder, cumin, cayenne, and salt. Sear all sides in a skillet and throw into the crock pot with a jar of salsa. Shred beef and put over lettuce with avocado, black olives, salsa ( corn chips, cheese, etc)
*Chicken salad - Bake chicken @350 until no pink remains then toss with grapes, mayo, walnuts, celery, and salt and pepper. Serve over salad or on a croissant 

I also made these raw carrot cake bites this afternoon and they are delicious! Make some now. They are the perfect healthy treat to enjoy mid day, mid morning, or after dinner for dessert :)
